I have always been an olive oil girl through and through. I love the complex flavor, the peppery bite, and the way it adds extra flavor to a salad dressing.
Olive oil may run through my veins, but this olive oil lover has a secret... Avocado Oil Salad Dressing is my new go-to.
The subtle flavor of the avocado oil allows the other flavors in the dressing to shine. This dressing is all about the lemon. It is perfectly sweet with a touch of garlic and fresh herbs. Its light and bright and pairs beautifully with any green around.

Ingredients in Avocado Oil Salad Dressing:
- Avocado oil- you can sub grape seed oil for similar flavor, or olive oil for a new spin
- Lemon - has to be freshly squeezed! Trust me on this one.
- Garlic - finely minced for a delicate flavor
- Dijon mustard - emulsifies the dressing and make it creamy
- Maple syrup - adds a welcome subtle sweetness
- Kosher salt - or another type of salt, but kosher will give you a more accurate level of salinity. If substituting, start small and taste as you go.
- Pepper
- Fresh herbs of choice - I used chives and parsley. Basil or dill would be nice too!
How do you make avocado oil dressing?
This simple dressing will be ready in 5!
Add all the ingredients to a jar and shake until well mixed and slightly creamy. Alternately, you can whisk all ingredients except the herbs in a bowl until blended. Add in the herbs and stir once more.
How long will this dressing keep?
This dressing will keep in the fridge for up to 1 week!

- ½ cup avocado oil
- ¼ cup fresh squeezed lemon juice
- 2 tablespoons maple syrup
- 1 clove garlic, minced
- ½ tablespoon dijon mustard
- 2 tablespoons chopped fresh herbs
- 1 teaspoon kosher salt
- ½ teaspoon pepper
Instructions
- Add all the ingredients to a jar and shake until well mixed and slightly creamy.
- Alternately, you can whisk all ingredients except the herbs in a bowl until blended. Add in the herbs and stir once more.
Notes
You can sub another neutral oil, like grape seed, for the avocado oil. You can also make it with olive oil, which will change the flavor, but is still delicious!

Do you have to refrigerate that Italian dressing using the avocado oil? I make my Italian dressing with olive oil and coconut oil combination with my vinegar etc. I do not refrigerate it

Hi Karen, great question! Since there are perishables like herbs and lemon juice in this vinaigrette, it needs to be stored in the fridge.

I have made this a few times and it is really tasty , I like to mix with the lettuce leaves first then add the other salad ingredients. I like dill as the herb. Great to keep. in fridge.
